日に日に、寒くなりいよいよ本格的な冬の到来を感じます。今回は冬の鳥の鴨を使った料理、ふらんす料理 フリュイドゥメールさんの『 フランス産 鴨の胸身の林檎詰ロースト 』をご紹介します。
はるか遠くから、渡ってくる冬の鳥（フランス語でビジェ）は脂がのり、豊かな風味をかもし出しています。
冬のフランス料理を彩る鳥と言えばその代表が鴨です。そんな鴨の一番柔らかい胸肉の部分を使い、薄くスライスさせた林檎を肉の間に詰めて、オーブンで焼き上げます。鴨肉はフルーツとの相性がよい食材です。熱が加わわりしんなりとなった林檎は少し甘味がかって、淡く火を通した鴨肉を引き立てています。
この鴨の料理に使われるソースも、鴨の骨を砕き様々な野菜と一緒に長時間煮込まれ、そのだしが出たものをこして更に煮込んで基本のスープが作られます。大変手間がかかりますが、味を決める重要な部分です。そのスープに赤ワインや調味料を加えてできたソースは、鴨肉と林檎の甘味を上手く調和させ、このお料理を冬のご馳走に仕上げています。
こちらのお店では、夫婦二人でされている小さなレストランです。気軽に友人の家に訪れる様な感覚で料理をいただくことができます。また、実家の畑で育てたという野菜も多く使われていて、時折とれた季節野菜の楽しいお話も伺うことができます。
下鴨神社からも近く、結婚式の後小さな披露宴パー ティーをあげるカップルもいます。また、バースデイや記念日などのケーキもオーダーすることができ、食べ切れなかったケーキは包んで持ち帰ることもできます。気取らずにゆっくりした時間を過ごしながら、クリスマスのメニューにしばし浸ってみてはいかがですか？

藤原正隆＠藤原内科です。私は京都禁煙推進研究会のメンバーですが、このレストランは禁煙レストランとして、当研究会でもお薦めのお店です。タバコの煙に邪魔されることなく、美味しい料理をお楽しみ下さい。（今年の当研究会の新年会もここで行われました。ただ私は都合で参加できなかったのですが、家も近いので、是非一度お伺いしたいと思っております。）
